Fruit and vegetable preservation: The rapid aging of fruits after picking is closely related to the large amount of reactive oxygen species produced by the postharvest metabolism of the flesh. If the reactive oxygen species in cells cannot be timely cleared by the antioxidant system, it will lead to oxidative stress. Vitamin C is an important antioxidant substance in plants. Studies have shown that if the vitamin C content of fruits and vegetables is increased during postharvest storage, the postharvest fresh-keeping effect of fruits and vegetables can be improved.
Resistance to Browning: Fruits and vegetables are prone to discoloration after damage during transportation, packaging or processing, a phenomenon known as enzymatic Browning. The basic step of enzymatic Browning reaction is to oxidize phenolic compounds into o-quinones catalyzed by phenolase, and then quinones undergo a series of oxidative condensation polymerization to form brown products, which leads to Browning. Vitamin C is a common anti-browning agent, which can prevent Browning through 2 different mechanisms: In the absence of Polyphenol oxidation (PPO) substrate, it irreversibly inactivates PPO, possibly by binding to its active site; In the presence of PPO substrate, vitamin C will reduce the reaction product of PPO oxidation, that is, conjugate oxidation with the quinone formed by oxidation, and the quinone is reduced, resulting in the regeneration of phenol, thereby inhibiting Browning.
Improved protein properties: Vitamin C is unstable in aqueous solution and has an oxidation-reducing ascorbic acid system. Studies have shown that DHA, the first stable oxidation product of vitamin C, and other further oxidation products (threose, oxalic acid, etc.), their active carbonyl groups can be cross-linked with amino acid residues. Some scholars also believe that DHA participates in the exchange reaction between the -SH group and the disulfide bond, through which the development of molecules is increased. Protein-protein interaction is enhanced through the formation of intermolecular disulfide bonds, which may affect protein properties.
Inhibit fat oxidation: Vitamin C can both inhibit lipid oxidation and improve the antioxidant properties of the emulsion. Lipid oxidation is a serious problem in fatty foods, which has a negative impact on the shelf life and nutritional content of food. Due to the good reducibility of vitamin C, it can remove oxygen from food and protect oil from oxidation.
Reduce nitrite content: Nitrite reacts with amines in meat products to produce nitrosamines, which have potential carcinogenic effects after consumption. As an antioxidant, vitamin C can reduce nitrite to NO under acidic conditions and consume NO2-, thus reducing nitrite concentration.
As an SO2 supplement: SO2 is often added to wine as a protective agent, which is both a fungicide that effectively kills off bacteria in grapes and an antioxidant that prevents aging while protecting the natural fruit properties of the wine. In wine, there is a strict limit on SO2 residue, and the search for an ideal supplement or substitute for SO2 has become a research topic. The United States approved the use of vitamin C in wine and juice production in 1956.
