Sunflower seed protein is a protein product with defatted sunflower seed meal as raw material after removing the shell and phenolic acid compounds such as chlorogenic acid and caffeic acid. The main component is globulin (about 70% ~ 79%), followed by albumin and a small amount of gluten and alcohol-soluble protein. In the amino acid composition, the content of lysine is low, while the content of other essential amino acids is high.

1. For general food. The 1% ~ 2% of defatted sunflower seed protein powder after hot and humid cooking for 1 hour, adding to bread and other foods, can strengthen nutrition, make up for the lack of essential amino acid content in flour, but also can increase the elasticity of the bread, to prevent the effect of starch aging in flour.
2. Good additives for baby food. Compared with soybean protein, sunflower protein has lower lysine content but higher methionine content. The combination of sunflower seed protein and soybean protein can play a nutritional strengthening role when added to infant food
3. Additives in meat products. When sunflower seed protein is added to sausage and other meat products, the shrinkage is small during smoking, which can not only prevent oil separation, less weight loss, but also increase the tenderness of the sausage and make the product more palatability. When sunflower seed tissue protein (30%) is added to the filling of pies, buns, dumplings and other foods instead of pork, it can not only reduce animal fat in food, reduce cholesterol content, but also reduce costs.
4. Make artificial milk and other drinks. Sunflower seed protein has a soft smell and no odor such as bean smell. It is a good raw material for high-grade beverages and artificial milk. The sunflower seed protein concentrate was heat treated at 80ºC, and after mechanical stirring, emulsifier was added to make 3% emulsion containing protein. The mixed milk with milk was mixed at a ratio of 1:1 to obtain better flavor and color.
