Sodium alginate is a by-product of extracting iodine and mannitol from kelp or sargassum of brown algae. Its molecules are connected by β-D-mannuronic acid (β-D-Mannuronic acid, M) and α-L-guluronic acid (α-l-Guluronic acid, G) according to the (1→4) bond. It is a natural polysaccharide. It has the stability, solubility, viscosity and safety required for pharmaceutical excipients. Sodium alginate has been widely used in food industry and medicine.

1. Application in food
Sodium alginate is used to replace starch and gelatin as a stabilizer for ice cream, which can control the formation of ice crystals, improve the taste of ice cream, and stabilize mixed drinks such as sugar water sorbet, ice sherbet, and frozen milk. Many dairy products, such as refined cheese, whipped cream, and dry cheese, utilize sodium alginate's stabilizing action to prevent the food from sticking to the package, and can be used as a decorative coating to stabilize it and prevent cracking of the frosting crust.
Sodium alginate is used as a thickening agent in salad (a kind of salad) sauces, puddings (a kind of dessert), jams, ketchup and canned products to improve the stability of products and reduce liquid leakage.
Adding sodium alginate in the production of noodles, vermiculini and rice noodles can improve the cohesiveness of the product tissue, make its tension strong, bend large, reduce the breakage rate, especially for the flour content is low gluten, the effect is more obvious. Adding sodium alginate to bread, pastry and other products can improve the uniformity of internal tissue and water retention, and extend the storage time. The addition of a thermal fusion protective layer to frozen sweet products can improve the performance of flavor escape and melting point.
Sodium alginate can be made into a variety of gel food, maintain a good colloidal form, no seepage or shrinkage, suitable for frozen food and artificial imitation food. It can also be used to cover fruits, meat, poultry and aquatic products as a protective layer, which is not in direct contact with the air and extends the storage time. It can also be used as a self-coagulating agent for bread icing, filling filler, coating layer for snacks, canned food and so on. The original form can be maintained in high temperature, freezing and acidic media. It can also be made of elastic, non-stick, transparent crystal jelly instead of gelatine.
2. Application in pharmaceutical industry
Sodium alginate was included in the United States Pharmacopoeia as early as 1938. Alginate was included in the British Pharmacopoeia in 1963. Alginate is insoluble in water, but it expands when placed in water. Therefore, traditionally, sodium alginate is used as a binder for tablets, while alginate is used as a disintegrator for quick-release tablets. However, the effect of sodium alginate on the properties of the tablet depends on the amount put into the prescription, and in some cases, sodium alginate can promote the disintegration of the tablet. Sodium alginate can be added during granulation, rather than in powder form after granulation, making the process simpler. Compared with the use of starch, the mechanical strength of the prepared sheet is greater.
Sodium alginate is also used in the production of suspensions, gels and concentrated emulsions based on fats and oils. Sodium alginate is used in some liquid drugs to enhance viscosity and improve suspension of solids.
