According to the Announcement of the Ministry of Health on the approval of new resource foods such as galactose oligosaccharide (Ministry of Health Announcement No. 20 of 2008), isomaltol is a new food raw material. Its scope of use is suitable for all kinds of food, but does not include infant food. And consumption ≤ 100g/day.
When applied to baked goods, sucrose can be replaced by 1:1, and there is generally no need to change the traditional formula. If the Browning is too shallow, the baking temperature can be appropriately increased, or a small amount of fructose can be added.
It is a kind of functional sugar alcohol emerging in the world in recent years, and is an excellent substitute for sucrose, starch sugar and other sugar alcohols. The sweetness is 50 ~ 60% of sucrose, with low hygroscopic, high stability, high tolerance, low calories, pure sweetness and other characteristics. The product is extremely safe, and the US FDA has given it GRAS (Generally recognized as safe) status, with no limit on its daily intake. From a nutritional point of view, isomaltol is a carbohydrate, and from a physiological point of view, it is not easy to be broken down and absorbed in the human body, nor is it broken down and utilized by the vast majority of microorganisms. As a substitute for sugar, the product is widely used in the production of sugar-free food, sugar-free health care products and sugar-free drugs.
