1. It has the following effects in food:
(1) Enhance the adhesion of protein in raw flour.
(2) The starch particles are combined with each other and dispersed into the network structure of the protein.
(3) Form a dense dough with a smooth and glossy surface.
(4) Form a stable dough colloid to prevent the leakage of soluble starch.
(5) Strong water retention, so that the moisture is evenly kept in the dough to prevent drying.
(6) Improve the ductility of dough.
(7) The grease in the raw material is steadily dispersed into the dough.
2. As an electrolyte, it interacts with protein, changes protein structure, enhances food viscoelasticity, and improves tissue.
3. Due to the slow dissolution in water, it can be pre-mixed with granulated sugar, powdered starch syrup, emulsifier, etc., to improve the dissolution speed.
4. Clarifying agent (polymer coagulant) for sugar liquid, salt water, beverage, etc.
Other uses
1, used as corrosion and scale inhibitor, water quality stabilizer, paint thickening agent and water retention agent, flocculant, drilling mud treatment agent, etc.
2, used for circulating cold water treatment of copper equipment, its scale inhibition effect is good. When the dosage is 100 mg/L, it can form chelates with scale forming ions in medium hardness water and flow with water, and can prevent the formation of iron oxide scale.
3, used as a fluid loss reducer in low solid phase drilling industry.
4, good dispersant. It can be used in combination with other water treatment agents for the treatment of oilfield water injection, cooling water and boiler water.
