1. Food industry
(1) Low calorie functional sweetener
There was no significant difference in blood glucose levels between the control group and the control group at 1h and 2h after taking maltitol. Four patients with diabetes took maltitol 20g daily for 40 consecutive days (two courses). No changes were observed in blood sugar, blood lipids, kidney function and liver function, indicating that patients with diabetes could consume maltitol. Maltitol is relatively stable to heat and acid, and its viscosity is 2 times larger than that of xylitol and sorbitol. Therefore, maltitol can be widely used in sugar-free fillings and sugar-free foods instead of sucrose.
(2) Used as a fat substitute
Sugar alcohol is an effective emulsifier and foaming agent for cake and cream. The oil and water emulsified margarine produced by the emulsification stability of sugar alcohol is not only of high quality, but also can make food produce grease and smooth structure in food production. Therefore, maltitol is used as a fat substitute to produce low-calorie food and maintain the flavor and organization of the original fat food.
(3) Used as a sweetener for high fat foods such as ice cream, cream pastry, cream candy, can inhibit fat accumulation in the body and prevent obesity.
(4) Used for processing chewing gum, candy, pastries, beverages and children, elderly food, etc., can promote the absorption of calcium in the human body, and can prevent dental caries and elderly osteoporosis.
(5) Maltitol is soft and pure in sweetness, is not colored when heated to 150ºC, and does not cause Maillard reaction when heated with amino acids, and is suitable for processing high-grade hard candy, milk candy, crystal milk candy, etc. In addition, maltitol has excellent color protection effect, used for processing preserved fruits, jelly, pickles, etc., can extend the fresh life of fruits and vegetables.
(6) Maltitol has good moisturizing properties, non-fermentability, used in bread and pastries, can extend the shelf life.
2. Chemical industry
Maltitol is stable to acid and heat, and can be used as a raw material for synthetic chemistry in the chemical industry to manufacture synthetic resins, surfactants, contact agents, etc.
3. Pharmaceutical industry
From the analysis of metabolites, the absorption rate of maltitol in human body is low, and the absorbed maltitol is first hydrolyzed to glucose or sorbitol, and enters their respective metabolic pathways. Since the hydrolysis rate of maltitol in the body is slow, the glucose released is not enough to cause the fluctuation of blood sugar level. Meanwhile, the absorption of sorbitol released by hydrolysis is slower, and the absorption of glucose is inhibited to some extent. Therefore, the increase of blood glucose level and blood insulin level after the intake of maltitol is small. In addition, it can promote the absorption of calcium, so it can be used as medicinal drinks and other products, especially for patients with diabetes, liver disease, cardiovascular disease, arteriosclerosis, hypertension, obesity and osteoporosis.
4. Cosmetics
Because maltitol has good hygroscopic and moisturizing properties, it can be used as a cosmetic component and as a moisture regulator.
